no, cured in heavy salt. Make sure you ask about there shipping. Because I got a refund as they shipped USPS instead of UPS and I have a metal mail box in the summer. I don remember if I had the expiration date non the jar because I bought this a long time ago; I could say the taste of salmon caviar inside was excellent; from my knowledge, a well-sealed jar could be good for 2 years. This brand is original Russian , very good staff.

Q: Is this caviar pasteurized?

Salted. Caviar is NEVER pasturized! It is either "lightly salted" or "heavily salted"... fish is never "pasteurized"
