I recently tried this cake flour, and it has made a noticeable difference in my baking! The texture is incredibly fine and silky, which helps create light, airy cakes with a soft crumb. I am learning to bake cakes (cupcakes) at high altitude. So many of the high altitude recipes call for cake flour. Swans Down is a name I recognized from baking with my aunt when I was young. This product creates a light fluffy crumb that holds together with shaping and icing. The price is great too! I have been very happy with this brand. I also used it in small amounts in my Brioche Bread to create that light fluffy texture. Very happy with my purchase!

I order this product alot for a person that loves to bake. Sometimes I find it cheaper than the stores, other times extremely higher but I wait for a reasonable price and free shipping. This brand is not available everywhere.

Swans Down Regular Cake Flour has been a staple in my kitchen for a long time. However, for some reason, this 8-pack of cake flour produces very dry cakes. I'm not sure what happened. I have used it with many. many different recipes, and I always get a dry cake. I know the product is usually good, so I'm giving it 4 stars. I definitely lost my money on this purchase.
