Gluten is a good protein
Good stuff and Amazon has a very good price. Local stores want arm and leg for it.

Essential for Great Bread
Although many people have stopped eating gluten, it is an important protein for making artisan breads. I use the gluten for making breads from croissants to 9-seeded whole wheat bread. You can simply sift the gluten with the flour. It helps the bread to rise and gives it a great texture. The gluten is packaged in plastic bags with ziplock tops. The size of the bag is perfect for about 5 to 10 loaves of bread...depending on the type of bread. The gluten smells and tastes fresh and hearty. I used to get gluten at the high end grocery store....but they stopped carrying it. I am grateful that Amazon continues to make this ingredient available.

It's gluten, it's convenient, and it's Bob's
I can no longer get straight gluten flour locally, which is unfortunate as it was cheaper in bulk. I trust Bob's products and this was the best option online. I've used it for bread (adding gluten to 100% whole wheat) for sevearl months and it performs as expected. If you don't have a local source for bulk this is a good alterantive.

Mixed results
I added this to a medium rye recipe to help the dough rise and included a cup of standard bread flour as well. The loaf was dense with a poor crumb. So it is hard to judge if this had any effect or not. I will try adding this to my normal bread recipe and keep my fingers crossed for extra fluffy bread.

Great for baking
Great gluten for my wheat and rye breads.It lasts a long time if you freeze it. So it is always on hand.

Works well in a bread machine
Purchased this product to help rise bread and rolls dough made in a bread machine. Works like a charm, using the same same 1:1 ratio as the quick yeast.
