Q: How do these mount to the ceiling?

There's two really stiff springs that hold them in place. You have to cut your hole, then pry them up so you can slide it in. We found that using a zip tie worked well to hold the springs back as they are pretty stiff, then once slid in place, just cut the tie. A bit of a waste, but much easier on the hands. Oh, and to cut the holes, I highly recommend an oscillating tool. We got a cordless DeWalt one, which granted isn't cheap, but made it so much quicker and easier. And handy for a lot of other stuff.

Q: Can you use an in-line volume switch for individual speakers?

You can purchase speakers with attenuation knows directly on the speaker.

Q: Can I use this system on my patio?

You could power outdoor speakers, but I haven't seen any documentation that indicates it is for outside use also. So, as long as it was inside somewhere, it should be fine. Too warm, dusty and potentially exposed to high humidity / rain for outside placement I would think. I would look for outdoor rated or marine rated if you want something outside.
