Worked out just fine for New York style Jewish Rye
There are several different grades of Rye flour (light, medium, dark) and this light type is just great for making the New York style sandwich rye that I like so much. Used a Bread Machine recipe that includes Dill pickle juice and I feel it's as close as you can get to the expensive store-bought half-loaf. Sure made some tasty sandwiches!

Fresh & flavorful.
I have taken to adding a small amount to all my breads as it adds just a bit of a flavor boost without the heavier flavor of a strong rye.

Great as healthy, "no poo" shampoo!
Buying my 2nd bag of this flour today; the first 2lb bag lasted two years (I have short hair and just wash it every 5 days or so, so it doesn't get too dry). I have short, thick, curly hair and it's the way to go, without all those added chemicals and perfumes. I read about this online. I mix about 8 Tablespoons of this flour gradually with purified water in a bowl, whipping it up until it's like a thin paste, then apply onto my hair and scalp. It's especially soothing and good for the scalp. Afterwards I rinse with two Tablespoons organic Apple Cider Vinegar in a few cups of water. For natural styling, I use a few drops of 100% organic Aloe Vera Gel mixed with a few drops of organic Argan oil, rubbed between my palms, then scrunched around on my hair. Much better and healthier than those commercial styling gels that feel plasticy to the touch, and gently holds the curls in place.

Great flour to wash hair with.
I have no idea how this flour tastes but it works perfectly for my purpose.Like another reviewer, I use this light rye flour to wash my hair. I've been using rye flour to wash my hair for a while but always only had whole grain rye flour with which I bake bread at home. The whole grain four is a pain to wash hair with - just like this light rye flour it cleans the hair so well, even producing a very light leather when thoroughly massaged on the scalp and doesn't tangle the hair (due to it being perfectly pH balanced for the scalp/hair). Rye flour is definitely my absolute favorite "no poo" (no shampoo) method to wash hair and doesn't require any conditioning rinse afterwards (I still like to use an apple cider vinegar rinse afterwards to give my fine curly hair a little boost but it's not necessary). The big benefit of this light rye flour compared to using whole grain, is that there are no flakes. Even if I would sieve whole grain, I'd still spend a long time washing out remaining flakes and once the hair was dry, would still find more. No such struggle with this light rye flour. It washes out of the hair very easily without residue.Highly recommend for this purpose.
